Fabian Taylor, is the manager at Dragon Restaurant and Bar. His mother
founded the business, over 15 years ago. They started small, building
clientele, and their colorful beachside bar and restaurant slowly grew
over time, "with the help of God." They sell Jerk Chicken, Rice and
Peas, Vegetable Fish, Lobster and Cray Fish soup. Cray Fish soup is
their local specialty. And Fabian says a lot of visitors really find
their Jerk Chicken fantastic, and come back for more, or send others to
them for some. They prepare fish, grilled, jerked, and dried, cooked in
onion, or escoveitch. Sides include rice and peas of course, but also
bami, fesitival, and fried plaintain. During the week all the soup
choices are usually available as well as Jerk Chicken, most of the sea
food choices are only available on Thursday to Sunday.
It is usually four of them working on weekends. It is very much a family affair with his Mom returning, his sister offering her support, and there is also the support of a close friend of the family. He started living and working with his Mom at 14 years old, after returning to Jamaica from Boston Bay where he had migrated to as a young child, with his Father. The restaurant name isn't official yet, bit is Fabian's suggestions, based on Dragon being one of his mother's nicknames.
